I hosted a simultaneous cooking demonstration and panel discussion with prominent Korean food experts on the role of fermented foods in Korean culture. The Korean approach to fermented food is a metaphor for how their culture exists in a creative chaos.

While the panel tasted the hongeo (fermented skate) prepared by Chef Jeong, I asked the panelists to discuss the Korean concept of "jeong" (familial feelings towards a stranger).
